Perfect for a savory winter meal….
– 4 tablespoons butter
– 3 cups sliced leeks, half moon
– 1 tablespoon shallots, minced
– ½ cup Ya Mastiha Liqueur
– 2 teaspoons fresh dill
– Sea Salt and Fresh Ground Pepper to taste
– 10-12 Hickory Smoked Bacon wrapped Fresh Sea Scallops pinned with wooden picks
Sauté leeks and shallots in butter, then remove and put on side. In same sauté pan, sear Hickory Smoked Bacon-wrapped Sea Scallops for 3 minutes per side on high heat (enough to brown bacon). In separate pan, stir in Ya Mastiha, sautéd leeks, shallots and dill. Serve sauce over Bacon wrapped Scallops. Season with sea salt and freshly ground pepper. YaMas!
